Be Happy, Enjoy The Coffee!

A group of alumni, highly established in their careers, got together to visit their old university professor. The conversation soon turned into complaints about stress in work and life. Offering his guests coffee, the professor went to the kitchen and returned with a large pot of coffee and an assortment of cups, porcelain, plastic, glass, crystal, some plain-looking, some expensive and some exquisite - telling them to help themselves to the coffee.

After all the students had a cup of coffee in hand, the professor said: "If you noticed, all the nice looking expensive cups were taken up, leaving behind the plain and cheap ones. While it is normal for you to want only the best for yourselves, that is the source of your problems & stress. Be assured that the cup itself adds no quality to the coffee. In most cases, it's just more expensive and in some cases even hides what we drink. What all of you really wanted was coffee, not the cup. But you consciously went for the best cups...and then began eyeing each other's cups.

Now consider this: Life is the coffee. The jobs, houses, cars, things, money and position in society are the cups. They are just tools to hold and contain life, and the type of cup we have does not define nor change the quality of life we live. Thanksgiving Day Recipe

Sweet Potato Casserole

2 1/2 pounds sweet potatoes (about 3 large), scrubbed
2 large eggs, lightly beaten with a fork
3 tablespoons unsalted butter, melted plus more for the preparing the pan
2 tablespoons packed dark brown sugar
1 teaspoon kosher salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
Pinch of freshly grated nutmeg
Freshly ground black pepper
1/4 cup coarsely chopped pecans

Preheat the oven to 400 degrees F. Put the sweet potatoes on a baking sheet and pierce each one 2 or 3 times with a fork. Bake for 45 to 60 minutes or until tender. Set aside to cool.Turn the oven down to 350 degrees F. Scoop the sweet potato out of their skins and into a medium bowl. Discard the skins. Mash the potatoes until smooth. Add the eggs, butter, brown sugar, salt, cinnamon, ginger, nutmeg, and pepper to taste. Whisk the mixture until smooth.Butter an 8 by 8-inch casserole. Pour the sweet potato mixture into the pan and sprinkle the top with the pecans. Bake for 30 to 40 minutes until a bit puffy. Serve immediately.

Recipe of the Week

Caramel and Chocolate Apples
Recipe courtesy Wendy Taffet
Show:
Food Nation with Bobby Flay

12 Granny Smith apples
12 lollipop sticks
1 pound Caramel
Saran Wrap
Melted dark, white or milk chocolate
1/2 cup nuts
1/2 cup M&M's or favorite candy topping
Waxed paper


Insert lollipop sticks into core of apples.
Heat caramel until it becomes liquid. (Can use stove top or microwave). Roll out caramel in between 2 pieces of plastic wrap to flatten. Cut caramel into long strips, about 4 inches long, to fit around apple. Wrap caramel around apple. Stand upright on waxed paper and let set for 15 to 20 minutes.
Melt dark, white or milk chocolate. Pour melted chocolate into a metal bowl. Dip apples into chocolate. Sprinkle chocolate covered apple with nuts, M&M's or your favorite topping. You can also add stripes of dark, white or milk chocolate around the apple. Place decorated apples onto wax paper, standing upright. Refrigerate for 15 minutes.

Recipe of the Week

Gum Worm Cupcakes
Recipe courtesy Sandra Lee
A Semi-Homemade Halloween with Sandra Lee

Cupcakes:
1 box devil's food cake mix
1 1/2 cups cola
3 eggs
1/2 cup canola oil

Frosting:
2 cans ready-to-spread white frosting
20 drops yellow food coloring
10 drops red food coloring
1 1/2 teaspoons orange extract
1 cup powdered sugar, sifted

Garnish:
48 candy worms
1/2 package chocolate cookies, crushed

Preheat oven to 350 degrees F. Place cupcake papers in muffin pans. Set aside. In a large mixing bowl, combine cake mix, cola, eggs, and oil. Beat on medium speed for 2 minutes, scraping sides of bowl often. Fill cupcake papers 2/3 full with cake batter. Bake for 25 to 30 minutes. Cool in pan for 10 minutes before removing from pan. Cool completely on cooling racks before frosting. In a medium mixing bowl, combine frosting, food colorings, orange extract and sifted powder sugar. Spoon frosting into a pastry bag or zip-top bag fitted with a 1/4-inch round decorating tip. Pipe the frosting on the cupcake by starting at the outside edge, circling twice and than working toward the center.

Finish cupcakes by sticking 2 candy worms into frosting and sprinkling tops with crushed cookies

Recipe of the Week !!!!


Red Velvet Bars
Recipe courtesy Sandra Lee
Recipe SummaryDifficulty: Easy
Prep Time: 10 minutes
Cook Time: 40 minutes
Yield: 12 servings

Print: Full Page3X5 Card 4X6 Card



For Cake: 1 box (18 1/4 ounces) German chocolate cake mix (recommended: Betty Crocker)
1 stick butter, softened
1 egg
1 ounce red food coloring (recommended: McCormick)

For Cream Cheese Layer: 16 ounces cream cheese, softened (recommended: Philadelphia)
1/2 cup sugar
2 eggs
1 teaspoon vanilla extract (recommended: McCormick)

Set up grill for indirect cooking over medium heat. Spray 9 by 13-inch foil pan with cooking spray; set aside.

In a large mixing bowl, beat with an electric mixer on low speed, cake mix, butter, egg, and food coloring until combined. Press cake mixture into prepared pan; set aside. In a medium mixing bowl, beat cream cheese and sugar on medium speed until creamy. Add eggs and vanilla, beat to combine. Spread cream cheese mixture over cake layer.

Place foil pan in a second foil pan for stability and insulation. Place on hot grill away from heat. Cover and bake 40 to 50 minutes. Rotate pan halfway through baking. Remove from grill and cool completely before cutting.

INDOOR: Preheat oven to 350 degrees F. Spray 9 by13-inch baking pan lightly with cooking spray; set aside. Prepare bars as directed. Bake in preheated oven for 40 to 45 minutes, or until bars barely start to pull away from sides. Cool completely before cutting.

Labor Day Menu Idea

Pomegranate Martinis

Difficulty: Easy Prep Time: 5 minutes Yield: 4 servings


6 fluid ounces (3/4 cup) chilled gin (recommended: Tanqueray No. 10 gin)
1 lemon, juiced
1 orange, juiced
1/4 cup pomegranate syrup
Pomegranate seeds, for garnish
In a medium pitcher or bowl, stir the gin, fruit juices, and syrup together. Divide among 4 martini glasses. Garnish with pomegranate seeds.

Recipe of the Week

Orzo SaladRecipe courtesy Giadia De Laurentis of the Food Network

Ingredients:
4 cups chicken broth
1 1/2 cups orzo
1 (15-ounce) can garbanzo beans, drained and rinsed
1 1/2 cups red and yellow teardrop tomatoes or grape tomatoes, halved
3/4 cup finely chopped red onion
1/2 cup chopped fresh basil leaves
1/4 cup chopped fresh mint leaves
About 3/4 cup Red Wine Vinaigrette,
Salt and freshly ground black pepper

Instructions
Pour the broth into a heavy large saucepan. Cover the pan and bring the
broth to a boil over high heat. Stir in the orzo. Cover partially and cook until the orzo is tender but still firm to the bite, stirring frequently, about 7 minutes. Drain the orzo through a strainer. Transfer the orzo to a large wide bowl and toss until the orzo cools slightly. Set aside to cool completely. Toss the orzo with the beans, tomatoes, onion, basil, mint, and enough vinaigrette to coat. Season the salad, to taste, with salt and pepper, and serve at room temperature.Red Wine Vinaigrette1/2 cup red wine vinegar 1/4 cup fresh lemon juice 2 teaspoons honey 2 teaspoons salt 3/4 teaspoon freshly ground black pepper 1 cup extra-virgin olive oil Mix the vinegar, lemon juice, honey, salt, and pepper in a blender. With the machine running, gradually blend in the oil. Season the vinaigrette, to taste, with more salt and pepper, if desired.

Yield: 1 3/4 cups

Recipe of the Week

Seared Pork Tenderloin with Pepper Compote
From Food Network Kitchens

Yield: 4 servings

Compote: 1 yellow bell pepper

1 red bell pepper

1 teaspoon coriander seed

1/4 cup extra-virgin olive oil

1 tablespoon white wine vinegar

2 garlic cloves, smashed

1 tablespoon fresh thyme leaves, chopped

Freshly ground black pepper


Pork:

1 tablespoon ground ginger

4 teaspoons extra-virgin olive oil

2 pork tenderloins (about 14 ounces each), each halved crosswise

Salt

Freshly ground pepper


For the Compote: Position an oven rack in the upper part of the oven and preheat the broiler. Line a broiler pan with foil. Halve the peppers through the stem, and remove the seeds and stems. Lay the peppers, cut side down, on the prepared baking sheet. Broil the peppers, moving as needed, so the skins char evenly, about 8 minutes. Put the peppers in a large bowl, cover, and set aside until just cool enough to handle, about 5 minutes. (Don't leave them for too long, or the peppers will get muddy-looking from the charred skins.) Rub the skins off the peppers with your fingers and lightly rinse with cool water, if necessary, to remove any remaining charred skin. Dice the peppers. Toast the coriander in a dry skillet, and then coarsely crack. Toss the peppers in a bowl along with the olive oil, vinegar, garlic, coriander, thyme and season with salt and pepper, to taste. Set aside for at least 1 hour to let the flavors come together.
Preheat the oven to 350 degrees F.


For the pork: Combine the ginger and 2 teaspoons of the olive oil to make paste. Heat a skillet over medium-high heat with the rest of the olive oil. Season pork with salt and pepper, and sear the meat on all sides until golden brown, about 2 minutes. Brush each piece of pork with some of the ginger oil. Transfer pan to oven and roast until an instant-read thermometer inserted into the pork registers 150 degrees F, about 8 minutes. Set aside for 5 minutes. Thinly slice the pork, divide among 4 plates and serve with the pepper compote.

Recipe of the Week


Hello friends family and neighbors,
I know you missed the recipe of the week, last week. So hopefully this will make up for the delay. This one is for all the seafood fanatics out there. I have not tried this recipe but it sounds delicious. It is from Bobby Flay of the Food Network. Enjoy and if anyone makes this please give us some feedback. Thanks.

2 (1 1/2-pound) lobsters, par-boiled and halved lengthwise
1/2 cup fresh lime juice
2 teaspoons honey
2 tablespoons prepared horseradish, drained
1 tablespoon Worcestershire sauce
1 teaspoon hot sauce (recommended: Tabasco)
1 tablespoon chopped fresh tarragon leaves
1 tablespoon extra-virgin olive oil
Salt and freshly ground pepper
1 ripe avocado, peeled, pitted, and chopped
1/4 cup chopped watercress
4 lime wedges, for garnish
Heat grill to medium.
Place lobsters on the grill, cut side down, and cook until slightly charred and just cooked through. Remove meat and coarsely chop.
Whisk together lime juice, honey, horseradish, Worcestershire, hot sauce, tarragon, and olive oil in a medium bowl. Season with salt and pepper, to taste.
Add the grilled lobster meat, avocado, and watercress.
Serve in martini glasses and garnish with a lime wedge.

Recipe of the Week



Have a fun but safe 4th of July weekend.

Ginger-Lime Shrimp From Food Network Kitchens






Recipe Summary
Prep Time: 25 minutes
Cook Time: 15 minutes
Yield: 4 servings




1 1/2 pounds large shrimp, shelled, deveined
Kosher salt and freshly ground pepper
4 teaspoons unsalted butter, cut into 4 pieces
1 1/2 teaspoons finely grated peeled fresh ginger
2 tablespoons fresh lime juice
1/2 teaspoon grated lime zest
10 mint leaves, julienned
10 basil leaves, julienned

Divide the shrimp between two 8- or 9-inch pie pans and pat them completely dry with a paper towel. Arrange the shrimp so they lay flat and are evenly spaced in the pans.
Heat 2 large skillets over medium heat. Season the shrimp with salt and pepper; add a teaspoon of butter to each pan and turn the heat to high. When the foam subsides, invert a pie pan of shrimp over the skillet so they fall into the pan all at once. Repeat with the other pan of shrimp. Cook the shrimp, undisturbed, until they turn golden brown on the bottom, about 2 minutes. Add a remaining teaspoon of butter to each pan and turn off the heat. Turn the shrimp over with tongs and cook for 1 minute in the residual heat of the pans. Add half the ginger, lime juice and zest, mint, and basil to each pan, and shake to combine.
Divide the shrimp among 4 plates or a serving platter and serve hot or at room temperature.

2 tablespoons unsalted butter
2 shallots minced
3 gloves garlic, minced
1 cup Myer's dark rum
3 cups chicken stock
2 tablespoons ancho puree
2 tablespoons molasses
Salt and freshly ground pepper
4 filet mignon steaks, 8 ounces each

Melt the butter in a saucepan over mediumhigh heat and sweat the shallots and garlic. Add the rum, bring to a boil and reduce to 1/3 cup. Add the stock, bring to a boil and reduce the heat. Whisk in the remaining ingredients and simmer until reduced to 2 cups.

Preheat the grill. Season the steaks on both sides with salt and pepper to taste. Grill to desired doneness. Drizzle with the sauce.
